Ingredients:

  • 1 l water
  • 1,6 kg Flour ’00”
  • 50 g sea salt
  • 29 g sugar
  • 2 g fresh yeast
  • 50 gr olive oil

Method:

  1. Mix flour with yeast
  2. Dissolve salt in water
  3. Gently mix flour with water
  4. Add sugar and mix
  5. Add olive oil and continue to mix for 20 min or until are smooth, elastic dough
  6. Add more flour is necessary
  7. let to rest 30′
  8. Divide in 10 round pieces.
  9. Cover with plastic foil and let to rest 6-8 h
