Ingredients:
- panceta
- sofrito: onion, celery, carrots
- garlic
- 50%shank & 50% chuck
- pork belly
- tomato puree
- milk
- red wine
- tomato sos
- bay leafs
- nutmeg
- parmesan skin
- chicken or beef stock
Method:
- Prajeste usor panceta
- Add sofrito and cook
- Add usturoi
- Scoate pancetta & sofrito si in aceeași oala add puțin ulei si prăjește carnea la foc mare pana prinde culoare.
- Add pork belly cook then add tomato puree, then cook
- Add milk, cook
- Add red wine and cook until wine is 50% absorbed
- Add sofrito
- Add tomato sos
- Add parmesan skin, bay leafs, nutmeg
- Add stock
- Cover and cook on oven 120’C – 3-4.5 h
