Ingredients:

  • panceta
  • sofrito: onion, celery, carrots
  • garlic
  • 50%shank & 50% chuck
  • pork belly
  • tomato puree
  • milk
  • red wine
  • tomato sos
  • bay leafs
  • nutmeg
  • parmesan skin
  • chicken or beef stock

Method:

  1. Prajeste usor panceta
  2. Add sofrito and cook
  3. Add usturoi
  4. Scoate pancetta & sofrito si in aceeași oala add puțin ulei si prăjește carnea la foc mare pana prinde culoare.
  5. Add pork belly cook then add tomato puree, then cook
  6. Add milk, cook
  7. Add red wine and cook until wine is 50% absorbed
  8. Add sofrito
  9. Add tomato sos
  10. Add parmesan skin, bay leafs, nutmeg
  11. Add stock
  12. Cover and cook on oven 120’C – 3-4.5 h
