Ingredients:

  • salmon file
  • 1-2 cloves of garlic, finally chopped
  • 1 tsp Dijon mustard
  • 150 ml vegetable stock
  • 150 ml double cream
  • fresh parsley, finally chopped
  • 1 tbsp butter
  • salt & pepper

Method:

  1. Heat a pan, add a little beat olive oil and fried salmon on the skin down, for 3-4 minutes, then set a side
  2. I same pan, add butter, garlic and cook 30 sec then add vegetable stock. Let to reduce.
  3. Add double cream and mustard. Seasoned with s&p. Let to reduce
  4. Add salmon with skin up and cook for 2-3 minutes.
  5. Sprinkle with parsley.
  6. Serve with boiled potatoes and carrots.
