Ingredients:
- salmon file
- 1-2 cloves of garlic, finally chopped
- 1 tsp Dijon mustard
- 150 ml vegetable stock
- 150 ml double cream
- fresh parsley, finally chopped
- 1 tbsp butter
- salt & pepper
Method:
- Heat a pan, add a little beat olive oil and fried salmon on the skin down, for 3-4 minutes, then set a side
- I same pan, add butter, garlic and cook 30 sec then add vegetable stock. Let to reduce.
- Add double cream and mustard. Seasoned with s&p. Let to reduce
- Add salmon with skin up and cook for 2-3 minutes.
- Sprinkle with parsley.
- Serve with boiled potatoes and carrots.
