Ingredients:
- cod fish fille & felii lungi de carrots
- for mouse: 200g cod fish, egg white, 50g cream, salt + shiitake
- puree: carrots, ginger, cardamon seed, salt
- Fennel sauce; fennel, onion, leaks
- daikon (Japanese ridiche alba)
- quinoa seeds
Method:
- Cling film, pune feliile de carrots, fileul de peşte, mouse, iar apoi rulezi si îl videzi
- For mouse blend all the ingredients iar la final adaugi shiitake usor prajite
- Cook subvid la 57’C – 30 min.
- For puree: fierbe totul in apa cu sare. Blend cu cream & lemon juice
- Fennel sauce: sote all ingredients dar fără culoare. Add wine, pepper corn & bay leafs. Then add fish stock and cook till soft. Strecoara si folosesti doar lichidul la care adaugi cream fresh si il reduci.
- Daikon: peeled, cut in round pieces and streaming till soft. Faci o emulsie de white wine si lemon juice pe care il reduci iar apoi adaugi gradual cold butter. Add salt. Foloseste sorta de foc pt. partea de sus. Adaugi emulsia peste daikon inainte de plating.
- Prajeste quinoa in ulei la 180’C. Acestea le adaugi peste puree.
