Ingredients:
- 250 g flour
- baking powder
- 1 tsp baking soda
- 1.2 tsp salt
- 4 eggs
- 200 g sugar
- orange zest + 1/2 orange juice
- 3/4 cup oil
- 350 g grated carrots
- 1-2 tbsp raisin
Method:
- Mix dry increments: flour, baking powder, baking soda, salt
- Mix eggs with sugar until is double volume then add orange zest, juice and oil.
- Mix well and add flour. Mix now with a spatula.
- Add carrot and mix.
- Place the mixture in a baking tray and sprinkle raisin.
- Bake at 180’C – 30 min.
