Ingredients:

  • clarified butter
  • white wine
  • brunoise shallot
  • white vinegar

Method:

  1. Pune la redus shallot, pepper corn, 2 parts wine and 1 part vinegar si tulpinele de la patrunjel. Treb redus aproximativ 85%
  2. Bain marie. Pune într-un bol egg yolks, 2 tsp reduced wine & shallot, si 1 tsp boiling water. Whisk pt hollandes
  3. Cand Hollands este gata, ia de pe foc si adăuga treptat clarified butter and whisk.
