Ingredients:

  • Striploin vidat cu butter, oranje zest, S&P, sage
  • pumpkin, garlic, EVOO, chilli, s&p, rosemary or sage, thyme, mascarpone, etc
  • Red wine sos: challote, carrots, green sellery, beef stock, butter, orange zest, piper negru
  • Leaks: zahar

Method:

  1. Vacuum beef and cook at 57’C – 30 min
  2. Before to serve then fried on grill.
  3. Pumpkin bake in oven then mix all
  4. Leaks taiate in lungime. Blanch in salt water and lemon juice. Le racesti, le tai pe lung si le caramelizezi in tigaie cu puțin ulei si zahăr.
  5. Spanacul cook with garlic, s&p
  6. Red wine sauce: Caleste legumele si stinge cu vin roșu, lasă sa se reducă iar apoi adăuga supa de vita. Cook pana se reduce. Strecoară sosul si redu iar la final adăuga unt, s&p.
