Ingredients:

  • 250 g flour
  • baking powder
  • 1 tsp baking soda
  • 1.2 tsp salt
  • 4 eggs
  • 200 g sugar
  • orange zest + 1/2 orange juice
  • 3/4 cup oil
  • 350 g grated carrots
  • 1-2 tbsp raisin

Method:

  1. Mix dry increments: flour, baking powder, baking soda, salt
  2. Mix eggs with sugar until is double volume then add orange zest, juice and oil.
  3. Mix well and add flour. Mix now with a spatula.
  4. Add carrot and mix.
  5. Place the mixture in a baking tray and sprinkle raisin.
  6. Bake at 180’C – 30 min.
